Celery, carrot, onion, garlic (all finely chopped) with tomato paste and some tinned tomatoes, left to simmer for around 45 mins + makes for a great sauce! I added chick peas for a fuel meal but you can add any protein. Bonus tip, mash some sweet potato as a base for a healthy Shepard’s pie 💪
