I'm the main cook in the family. Generally, if I don't cook dinner, we aren't eating. It's the least I can do in exchange for my mom letting me live at home and covering my college tuition. It normally works out great, but in the beginning of January I'm having knee surgery and will probably be unable to cook substantially for 3 weeks. My mom is the type of person who can throw things into an oven or crock pot, but much more than that is iffy.I was hoping to make and freeze 7-10 recipes prior to surgery. I'm not super experienced with meal prepping, let alone freezer friendly recipes. Ideally, I would be able to prep things completely and my mom just has to put it in the oven. I'd also prefer things that are high protein.
